McCormick Lemon Drop Greek Wedding Cookies
I was selected to participate in a McCormick Baking Flavors Home Use Test. I decided to use my Lemon Drop Baking Flavor to give an updated twist to the traditional Greek Wedding Cookie and make heart shaped McCormick Lemon Drop Greek Wedding Cookies. Here’s the recipe I used:
Ingredients for McCormick Lemon Drop Greek Wedding Cookie Dough:
1/2 cup powdered sugar
1/4 cup sugar
1 cup butter or margarine, softened
2 teaspoons vanilla
2 teaspoons McCormick lemon drop baking flavor
2 cups all-purpose flour
1 cup finely chopped hazelnuts
1/4 teaspoon salt
Ingredients for McCormick Lemon Drop Greek Wedding Cookie Topping:
3/4 cup powdered sugar
4 teaspoons McCormick lemon drop baking flavor
Step One: Heat oven to 325°F. In large bowl, mix 1/2 cup powdered sugar, butter, McCormick lemon drop baking flavor and vanilla until smooth. Mix in flour, hazelnuts and salt until dough forms.
Step Two: Pat dough in to 1/4 – 1/2 inch circles; use a heart shaped cookie cutter to cut the dough in to a heart. Place hearts one inch apart on cookie sheet. (I pre-greased mine)
Step Three: Bake at 325 for approximately 15-20 minutes until the cookie sets but before it browns. Let cool for about 5-10 minutes.
Step Four: Using a brush paint the top of the cookies with McCormick lemon drop baking flavor. (It will dry instantly, one coat is perfect) Dust the top and bottom of each cookie in a bowl with 3/4 cup powdered sugar until you are satisfied. (I prefer a medium dusting)
Recipe Review: These cookies have a very smooth lemon undertone, the lemon is not overwhelming. You can adjust the amount of McCormick lemon drop baking flavor you use to increase or decrease the intensity of the lemon. The heart shape cookies bake differently than traditional Greek Wedding Cookies which are typically rolled in to a ball. The sides will be slightly crispier than your traditional Greek Wedding Cookie but the middle will have that moist texture you are used to. These cookies will hold their shape which is plus for any themed occasion such as Valentines Day or Christmas cookies.
McCormick Baking Flavor’s (Lemon) Review: I enjoyed baking with McCormick lemon drop baking flavor. It doesn’t have the same flavor as the lemon extract you would buy in stores. To me it tastes less acidic and gives the cooker a smoother lemon flavor. McCormick lemon drop baking flavor is not as concentrated as I thought it would be. I did have to use more flavor than I had originally planned for, which is okay, but I would personally like to buy this in a larger bottle. I used more than half of the 1 fl oz bottle by the time it was all said and done. I would definitely need a larger bottle so I wouldn’t have to keep running to the store for more.
