For the last two weeks I’ve been telling you about how to make two versions of breakfast cupcakes; Breakfast Cupcakes With Shredded Ham, Eggs, and Cheese and Breakfast Cupcakes With Ham Liners, Eggs, and Cheese. What if you didn’t want to make 12 breakfast cupcakes? Or what if you were also craving muffins for breakfast? Do you really have to dirty up two muffin pans? No! “Ain’t nobody got time for dat!” (I can’t help it, that saying will stick with me for the rest of my life)
First I’m going to tell you what to do if you don’t want to make a full batch of muffins or breakfast cupcakes. Let’s say you only want to make 6. All you need to do is fill the vacant muffin tins with water. That’s it! It’s that simple and to be honest I think this makes muffins more moist.
If you instead want to make 6 muffins and 6 breakfast cupcakes you will need to line 6 of the muffin tins with cupcake wrappers. You will poor your muffin batter in the cupcake wrappers. You will make your breakfast cupcakes in the other six muffin tins. You muffins likely will not need to cook as long as your breakfast cupcakes. You will remove the muffins from the muffin tin when they are done baking and return your breakfast cupcakes to the oven until they too are done. Voila! You’ve now successfully made a full breakfast in the oven with one muffin tin!
