Last Sunday we ran our weekly errands but Emiliablo decided to go in to toddler meltdown mode. We never made it to the grocery store so we had nothing to eat for lunch that day. I decided to get in the kitchen and make the best lunch I could with what we had. That’s when Chili Cheeseburger Casserole was born.
This recipe is fairly easy and I think the results are worth the effort. The taste is both bold and original. Next time I try this recipe I’m going to add chili beans. It may or may not be good but I think it would add a new element to this casserole.
What you need:
1 Lb of hamburger meet
1 Pack of Chili Mix
1 Box of Velveeta Mac N Cheese
1 bag of tater tots (I had less than a bag)
2 1/2 cups of Bisquick
1/2 cup of milk
1/2 cup of water
1 cup of shredded cheese (I used Colby Jack)
First you will need to Preheat to 450. The next step is to make your Bisquick dough. Follow the directions on the Bisquick box for their biscuit recipe. (2 1/2 cups of Bisquick and 1/2 cup of milk) I had to add more milk because the dough was too dry.
Spread your dough on a greased casserole pan. Top your dough with tatter tots. Let it bake while you work on the next steps.
Next brown your hamburger meat. Make sure you drain the grease!! Then add one pack of chili mix to your hamburger meat and a half of a cup of water. You want your meat mixture to be juicy but not runny. If it’s too thick slowly add more water. The chili juice will add flavor to the casserole but you don’t want to soak the bread.
Spread the chili meat and sauce over your tater tots and bread.
For this next step you will need to steal a pack of cheese out of your Velveeta shells and cheese. No worries, you can save the noodles for another day. Evenly distribute the Velveeta cheese over your chili meat sauce. Finally top your casserole with shredded cheese; I used Colby Jack shredded cheese.
Let it bake for another 10-15 minutes or until the dough is golden brown. Serve and enjoy!
